The evolution of the delicious, delicate flavors of Kyoto cuisine are largely attributable to the softness of the local water. Water is also a crucial component of the silk dyeing process. Being so soft, Kyoto water is absolutely perfect for dyeing silk by hand, and creates stunning graduations of deep, rich color. Yusai store their water in unglazed terracotta pots, adding charcoal to assist with purification and powdered sea oyster shells for improved alkalinity. Preserved in this way, water can be stored for a very long time. The addition of these 'impurities' improve the quality of the water for silk dyeing, enabling colorants to mix efficiently so that soft, delicate dyeing of the highest possible quality can be achieved. Yusai's artful way of enhancing Kyoto's water gives each of their stoles an absolutely unique flavor. Indeed each one is an individually created piece with no two being exactly the same.
